Real mascarpone isn't on every supermarket shelf in India. Here's what home bakers actually use instead — and which combination gets closest to the real thing.
Mascarpone is an Italian triple-cream cheese — thick, mild, and barely tangy, made by curdling cream with an acid rather than culturing it like most cheeses. It's what gives tiramisu its rich, almost custard-like texture, and it's genuinely hard to substitute perfectly. But it's also not always easy to find in India, especially outside the largest cities, so most home bakers here have worked out a reliable stand-in.
The short version: a blend of fresh paneer and hung curd (strained yogurt), whipped smooth with a touch of cream, gets you closest. Neither ingredient alone works well, but combined and processed until silky, the texture lands remarkably close to mascarpone, and it's something you can put together from almost any Indian kitchen or local dairy.
Use soft, fresh paneer (not the firmer, pressed kind meant for curries). It brings the fat content mascarpone needs.
Strain full-fat yogurt through muslin cloth for a few hours to remove excess whey, then blend in roughly equal parts with the paneer.
A few tablespoons of fresh cream, blended in until completely smooth, softens the texture to something closer to true mascarpone.
Run the whole blend through a food processor, not just a whisk — any graininess from the paneer will carry through into the finished tiramisu otherwise.
Cream cheese on its own is too tangy and dense to pass for mascarpone in a blind taste test, and plain curd or yogurt alone is too loose — it will make the tiramisu layers slide rather than hold their shape once sliced. Skip whipped cream by itself too; it lacks the body mascarpone brings and the dessert won't set properly in the fridge.
